We eat a lot of vegetables, no carbs as I am gluten intolerant, (my husband eats the sweet potato, not me) and usually salmon. This night it was a piece of chicken accompanied by roasted brussel sprouts, carrots, quinoa, sweet potato, and sesame marinated and baked purple cabbage. A colorful plate is a healthy plate.
