I had always loved to bake, trying new recipes, enjoying making fancy cookies and cakes, but after being diagnosed with gluten intolerance 16 years ago, I lost my love for baking. Last year someone gave me a gluten free bread mix, so I decided to try it. The result was good- the consistency a little less dense than bread with gluten, but close enough to make eating it feel like the “real thing” to me.

Oh, I forgot to say, she has been doing this for almost five and a half years, (will be 31 in December) not taking medication. They felt younger people needed to try to handle the pain in other directions and natural solutions at Children’s Hospital and she now goes to Columbus Arthritis Clinic. 🙂

I think you are doing a great public service since many people know someone or are someone who cannot tolerate gluten. I love the idea of people having a choice. I think my daughter loves to have things made with rice flour since it is rather good for gluten free, too. She has had rheumatoid arthritis since only 13, although complained from 11 on, about joint pain. It turns out that eliminating certain foods that trigger eczema and arthritis is allowing her organs to become healthier. She turned 25 and the Vioxx, Celebrex and other pain killers had eroded her stomach lining and other negative aspects occurred. She tries not to use dairy or any processed foods, Lisa. Thanks for the photo of the bread! Looks delicious and I will pass on the name of the brand to her! 🙂

Eczema is associated with gluten intolerance often. I get a rash if I do unknowingly eat something with gluten and my Dr told many people with psoriasis also cut gluten out and do better. I use rice flour in my cooking too, it is a good substitute

Oh you just made me remember some sweet memories…
My Mom baked bread at least twice a week. IT SMELLED SOOOOO good. and I loved a slice when it was still warm with melted butter on it. THANK YOU for bringing that memory back to life.
Almond flour makes pretty good scones and cookies and cupcakes I hear… I have a friend who needs gluten free and she has whipped me up a few and they are tasty!

yes, as a lover of cake it was a challenge as years ago there were few gluten free products. Today it is much easier to have my cake and eat it too!

I also don’t do bread – I used to love it – but If I have any – I have brown rice bread from trader joes (has to be toasted well) – or real sour dough/

I have gluten issues. Haven’t had wheat or corn for over a year. I love this post because I’ve never made gf free bread. Was it a mix or a gf flour blend recipe?
